Looking for a new salad recipe?! Well I got a delicious, nutritious, fresh, citrusy one for you.
-Quinoa (I buy the box from HEB)
-6 to 8 Tomatoes (I use the HEB zeema sweet tomatoes)
-Cook the quinoa in seasoned water, I usually do it with knorr powder (chicken flavor bouillon). The quinoa is 1 to 2 ratio, 1 cup of quinoa = 2 cups of water. I used 1/2 cup, it’s enough for 3-4 people.
-Place quinoa with seasoning in a small cooking pot add water and take it to the stove top on high until it boils, once water boils bring down heat to medium low, cover it and let it simmer for about 15min until water is completely absorbed by the quinoa. Turn off heat. Let it cool.
Ps: since the chicken knorr seasoning already have salt I don’t add anymore to it. You can cook the quinoa in chicken or beef broth as well.
-Dice cucumber (to the size you wish)
-Dice tomatoes (I cut in quarters)
-Finely chop the cilantro (amount to taste)
-Squeeze the juice of one lemon
-Add salt if desired
-Mix in the quinoa with all the ingredients and put it in the refrigerator for about 1/2 to chill.
Ps: you can always add cranberries for a sweet twist
And… VOILA!! Pair it with grilled chicken, fish, steak or whatever you like.
